Put a few seeds in water. Sabja grows a white cloudy coat within a couple of minutes. Chia takes longer and turns into a clear gel. Dry sabja is also smaller and rounder, while chia looks flatter with a mix of colours.
Nutrition
Chia is well studied. A tablespoon has about 4 g fibre, 2 g protein and around 2 g plant omega-3, according to USDA data. Sabja is also high in fibre, but there is far less reliable nutrition data on it, so be wary of any website quoting exact sabja numbers with confidence.
Which Is Better?
- For summer drinks: sabja. It soaks fast and has the classic falooda feel. It is traditionally used as a cooling seed.
- For weight loss and daily fibre: chia. It has better documented fibre and omega-3, and it works in more recipes.
- For omega-3: chia, or flax seeds if omega-3 is your main goal.
