Dry Fruit Chikki Recipe
Mewa Chikki Banane Ka Tarika β Crunchy & Healthy Snack
Ingredients (Saamagri)
- β1 cup gur (jaggery) β chopped
- β1/2 cup mungfali (peanuts) β roasted
- β1/4 cup badam (almonds) β roughly chopped
- β1/4 cup kaju (cashews) β roughly chopped
- β2 tbsp til (sesame seeds) β roasted
- β2 tbsp desiccated coconut
- β1 tbsp ghee
- β1/4 tsp elaichi powder (cardamom)
Banane Ka Tarika (Step by Step)
Dry fruits roast karein
Pan mein bina tel ke mungfali, badam aur kaju ko low flame par 3-4 minute roast karein. Til ko alag se 1 minute roast karein. Sab ek plate mein nikal lein.
Tip: Peanuts already roasted hain toh sirf dry fruits roast karein. Over-roasting se bitter taste aata hai.
Gur melt karein
Same pan mein ghee daalein, fir gur daalein. Low-medium flame par gur ko melt karein β approximately 3-5 minute lagenge. Stirring karte rahein.
Tip: Gur ka consistency check: thoda sa paani mein daalein β agar hard ball bane toh ready hai. Zyada cook mat karein warna kadwa ho jaayega.
Dry fruits mix karein
Gur melt hone par flame band karein. Turant roasted dry fruits, til, coconut aur elaichi powder daalein. Jaldi jaldi mix karein β mixture fast set hota hai.
Tip: Mixing bahut fast karna padega β 30 seconds mein mixture set hona shuru ho jaata hai.
Spread aur set karein
Greased thali ya butter paper par mixture daalein. Oiled rolling pin ya spatula se evenly spread karein β 5mm thickness rakhein.
Tip: Ghee lagayein haathon mein aur thali mein β chikki chipkegi nahi.
Cut karein
2-3 minute baad jab thoda set ho jaaye lekin puri tarah hard na ho β tab sharp knife se pieces cut karein. Pura thanda hone dein, phir pieces alag karein.
Tip: Zyada thanda hone par cut karna mushkil ho jaayega aur toot jayegi. 2-3 minute ka window hai.
Storage Tips
Airtight container mein room temperature par 1 month. Fridge mein 2 months. Moisture se bachayen warna soft ho jaayegi.
