Mewa Barfi Banane Ka Tarika β Diwali Special & Healthy
Ingredients (Saamagri)
- β1 cup kaju (cashews) β powder banayein
- β1/2 cup badam (almonds) β powder banayein
- β1/4 cup pista (pistachios) β finely chopped
- β1/2 cup sugar (ya sugar-free mein honey/dates paste)
- β1/4 cup milk
- β2 tbsp ghee
- β1/2 tsp elaichi powder (cardamom)
- βPinch kesar (saffron) β garam doodh mein bhigoya hua
- βSilver vark for garnish (optional)
Banane Ka Tarika (Step by Step)
Dry fruits ka powder banayein
Kaju aur badam ko alag alag mixer mein dry grind karein β fine powder banayen. Zyada grind mat karein warna oil niklega aur paste ban jaayega.
Tip: Dry fruits ko 10 minute freezer mein rakhein grind karne se pehle β powder better banega.
Sugar syrup banayein
Pan mein sugar aur milk daalein, medium flame par cook karein jab tak sugar dissolve ho jaaye aur mixture thoda thick ho jaaye (about 3-4 minutes).
Tip: Sugar-free version ke liye dates paste use karein β 1 cup pitted dates ko blend karke paste banayein.
Dry fruit powder mix karein
Flame low karein, kaju-badam powder, ghee, elaichi powder aur kesar daalein. Continuously stir karein 5-7 minutes β mixture thali se chhodne lagega aur ek mass ban jaayega.
Tip: Stirring band mat karein β nahi toh lumps ban jaayenge ya jal jaayega.
Set karein
Ek greased thali ya butter paper lined tray mein mixture daalen. Haath se ya spatula se evenly spread karein β approximately 1 cm thickness rakhein. Chopped pista aur silver vark se garnish karein.
Tip: Jab tak mixture garam hai tab tak spread karein β thanda hone par hard ho jaayega.
Cut karein
30 minute set hone dein room temperature par. Fir sharp knife se diamond ya square shape mein cut karein. Fridge mein 1 hour rakhein toh pieces aur clean katenge.
Tip: Knife ko ghee lagayein cutting se pehle β barfi chipkegi nahi.
Storage Tips
Airtight container mein room temperature par 1 week. Fridge mein 2-3 weeks. Packing mein butter paper use karein toh chipkegi nahi.
