Salted pista is sold in the shell, and about half the weight is shell. USDA data puts the edible part of in-shell pistachios at roughly 50%. So 500 g of in-shell pista gives you around 250 g of nuts to eat.
That is normal for every brand selling pista in shell. When comparing prices, compare in-shell with in-shell, and kernels with kernels.
American or Iranian Pista?
- American (California): large, evenly split shells, mild and slightly sweet. Easy to open.
- Iranian: often smaller with a deeper green kernel and stronger flavour. Usually priced higher.
Both are good. American pista is easier to find in consistent quality.
Salted or Unsalted?
Salted roasted pista is the classic snack. If you are watching your salt intake, keep to a small handful, or use unsalted kernels for cooking, kulfi and mithai.

Split shells
Most shells should be naturally open. Closed shells are hard to open and often under-ripe.
Kernel colour
Green to yellowish green inside. Brown kernels are old.
Crunch
Fresh roasted pista is crisp, not chewy.
Taste
Nutty with light salt. Any bitter taste means stale oil.
