Whole walnuts are cheaper per kilo because you are also paying for the shell. Roughly half the weight of a whole walnut is shell. USDA data puts the edible part at about 45%.

Chilean, American or Kashmiri?
- Chilean: light coloured kernels, mild and sweet, very little bitterness. Usually priced at the top.
- American (California): light to medium colour, reliable quality, a little cheaper.
- Kashmiri: traditional Indian walnuts with a stronger taste and often darker kernels. Quality varies a lot by batch.

How to Spot Good Walnuts
Colour
Light golden kernels are fresher and milder. Dark brown kernels are older or lower grade.
Smell
Nutty and clean. A paint-like or bitter smell means the oil has gone rancid.
Taste one
Fresh walnuts taste slightly sweet. Rancid ones are sharp and bitter.
Shell (for whole)
Clean, unbroken, light coloured, and heavy for its size.
