The Short Answer
Almost every walnut sold in India is the same species, the English or Persian walnut. What changes is where it is grown (Kashmir, Chile, California), the variety (Kagzi, Chandler and others), and the grade (kernel colour and whether it is in halves or pieces). For daily eating, light coloured halves from a recent harvest matter more than the country on the label.

Kashmir grows most of India's walnuts, much of it from old seedling trees, so quality varies from batch to batch. Chile and California grow mostly planted orchard varieties, which is why their kernels look more uniform.
By Variety
- Kagzi: the name means "paper-like". It is a thin-shelled Kashmiri walnut you can crack with your hand. Popular for whole (sabut) walnuts.
- Wonth and Burzul: traditional Kashmiri types with harder, thicker shells.
- Chandler: the most planted variety in California and Chile. Known for light coloured kernels and a thin shell. Many "Chilean" and "American" walnuts are Chandlers.
- Serr and Howard: other orchard varieties grown in Chile and California, similar in use.
- Black walnut: a different species with a very hard shell and strong flavour. Rarely sold in India and not what you get as akhrot.
By Grade
Walnut kernels are graded by colour and cut.
Extra light
Pale cream kernels. The mildest taste and the highest price.
Light
Light golden. The usual grade for good retail packs.
Light amber
Slightly darker, a bit stronger in taste. Fine for cooking.
Amber
Dark kernels, often older crop. Cheapest, more bitter.
By cut, halves cost the most, then quarters, then broken pieces. Pieces taste the same and are good for baking, ladoos and chikki.

How to Check Quality Whatever the Type
- Kernels should be light and even in colour.
- Taste one. Fresh walnuts are slightly sweet. Sharp or paint-like bitterness means the oil has gone rancid.
- Whole walnuts should feel heavy for their size and rattle very little.
