The Short Answer

For everyday eating, raw or soaked walnuts are the best choice. Walnut oil is rich in omega-3, which is delicate and can break down with strong heat. A light roast at home makes walnuts crunchier and less bitter and is perfectly fine now and then. Just keep it gentle and make small batches.

How to Roast Walnuts at Home

Pan

Dry pan on low heat. Stir for 4 to 5 minutes until fragrant. Do not wait for them to turn dark.

Oven

160°C for 8 to 10 minutes on a single layer. Shake the tray halfway.

Air fryer

150°C for 4 to 5 minutes. Check after 3 minutes, they burn quickly.

Cool

Spread on a plate and let them cool fully before storing, or they turn soft.

Masala walnuts: toss warm walnuts with a few drops of ghee, a pinch of salt, black pepper and chaat masala. Honey walnuts: coat with a teaspoon of honey after roasting and let them set.

Signs You Have Over-Roasted

  • Dark brown kernels.
  • A sharp, bitter smell instead of a nutty one.
  • A burnt aftertaste.

Throw these out. Burnt walnut oil tastes bad and has lost most of its value.
